Broiled Parmesan Golden Corvina

 Ingredients
2 pounds fresh golden corvina fillets
2 tablespoons lemon juice
1/2 cup grated Parmesan cheese

1/4 cup butter, softened
3 tablespoons mayonnaise
1 dash hot pepper sauce (e.g.Tabasco™)
salt and pepper to taste

DIRECTIONS:

  1. Preheat the oven's broiler.
  2. Place the corvina fillets on a greased baking tray.
  3. Brush them with lemon juice. In a small bowl, stir together the Parmesan cheese, butter, mayonnaise, hot pepper sauce, salt and pepper. Set aside.
  4. Broil the fillets for 4 to 6 minutes, until they can be flaked with a fork.
  5. Remove from the oven and spread the cheese mixture on top of fillets.
  6. Return to the broiler for an additional 30 seconds, or until the topping is browned and bubbly.

Alligator Fritters

 Ingredients
1 pound alligator tail meat, chopped fine, ground or chopped in food processor
1  sweet onion, chopped fine
1 green bell pepper, chopped fine
1 clove garlic, minced
1/2 cup all-purpose flour
2 teaspoons baking powder

1/2 teaspoon dry mustard
1 teaspoon salt
2 extra large eggs, beaten
2 tablespoons melted butter
1 tablespoon Worcestershire sauce
Optional: 1 teaspoon hot sauce
Canola or peanut oil, or a combination

Directions:

  1. Grind the alligator or pulverize in a food processor. Add the chopped onion, pepper and minced garlic and pulverize with the alligator in the machine.
  2. Sift the flour with the baking powder, dry mustard and salt.
  3. Beat the eggs. Add the flour mixture. Add the melted butter, Worcestershire and hot sauce, and combine with the alligator mixture.
  4. Pour canola or peanut oil or a mixture of both into a skillet 1 -inch deep. Heat to 380°F (the bubbling stage). Drop the batter 1 tablespoon at a time into the hot oil, turning the fritters over with a slotted spoon as they brown. Remove when browned on all sides.

Makes 12 fritters
