Harvest Chicken and Wild Rice

1 tbsp. Wild Harvest Organic Extra Virgin Olive Oil

2 lb. boneless skinless chicken breasts, cooked & diced

Salt & pepper to taste

Yellow onion, chopped

1 package frozen butternut squash thawed

1 package frozen Essential Everyday Brussels Sprouts, thawed, cut in half, lengthwise

1 tsp. Wild Harvest Organic Fresh Thyme chopped

½ tsp. Wild Harvest Organic Paprika

¼ cup Wild Harvest Organic Free-Range Chicken Broth

6 cup cooked Wild Harvest Minnesota Cultivated Wild Rice

½ cup Wild Harvest Organic Dried Cranberries

½ cup Essential Everyday Sliced Almonds



  1. Preheat oven to 350 degrees and grease 9 x 13 baking dish with Wild Harvest Organic Extra Virgin Olive Oil Cooking Spray.
  2. In large skillet over medium heat, sauté olive oil and onion for 5 minutes. Reduce heat and add butternut squash, brussels sprouts, thyme, salt, pepper and paprika. Continue cooking for 5 minutes.
  3. In large mixing bowl, combine chicken, broth, rice and dried cranberries. Add cooked mixture and transfer to baking dish. Top with almonds and bake for 20 minutes.
