Hyped for the Holidays

Believe it or not, the holiday season will be here before we know it! A big part of the holidays for me is planning meals for everyone here, there and everywhere. As a restaurant owner, a caterer and a chef for SHOP ‘n SAVE, I am around food almost 24/7. I not only love what I do, I’m doing what I love. Sharing recipes with you makes me so happy! Dinner always gets the glory when it comes to holiday meals, but in my opinion - nothing is better than breakfast with the ones I love most on Christmas morning (especially when my Bananas Foster Pancakes are on the menu). For the Pancakes

  • 1 ½ cups Wild Harvest Organic All-Purpose Flour
  • 3 ½ tsp. baking powder
  • 1 tsp. salt
  • 1 tbsp. Wild Harvest Organic Cane Sugar
  • ¼ tsp. Wild Harvest Organic Ground Saigon Cinnamon
  • 1 ¼ cups Wild Harvest Organic Whole Milk
  • 1 Wild Harvest Organic Cage Free Brown Egg
  • 3 tbsp. Wild Harvest Organic Salted Butter melted
  • ½ tsp. Wild Harvest Organic Pure Vanilla Extract

For the Bananas Foster

  • ¼ cup Wild Harvest Organic Salted Butter
  • 2 tbsp. Wild Harvest Organic Light Brown Sugar
  • ¼ tsp. Wild Harvest Organic Cinnamon
  • ¼ tsp. Wild Harvest Organic Nutmeg
  • ¼ cup Wild Harvest Organic 100% Pure Maple Syrup
  • ¼ tsp. Wild Harvest Organic Pure Vanilla Extract
  • 2 bananas, cut into ½ inch slices
  • ¼ cup Essential Everyday Pecan Halves


For the Pancakes

  1. In large mixing bowl, combine flour, baking powder, salt, sugar and cinnamon. Set aside.
  2. In separate mixing bowl, whisk together vanilla, egg, milk and butter.
  3. Add the wet ingredients to the dry ingredients and blend until smooth.
  4. Heat a coated skillet over medium heat. Pour batter in ¼ cup increments. Lightly brown on both sides.

For the Bananas Foster

  1. In large skillet, combine butter, brown sugar, cinnamon, nutmeg, maple syrup and vanilla on medium heat. Cook for 2-3 minutes, stirring constantly until mixture is thick.
  2. Lower heat, then add bananas and pecans. Cook for about 3 minutes.
  3. To serve, place 2-3 pancakes on individual plates and spoon bananas foster mixture over pancakes.

Yields 4-6 servings
