Early to bed and early to rise is my motto. As the head baker in my restaurant, 4 a.m. is when I start my day. The quiet of the morning while I sip my coffee and prepare to bake dozens of fresh muffins each morning is my favorite time of day. With back to school and fall approaching, I lean toward the harvest fruits in-season to create new and exciting recipes. Funny thing is, I have always put together combinations of the flavors I enjoy most, just in case I have to eat the remaining ones, LOL. Years ago, when I first opened my restaurant, I was known for my unusual pairings and still to this day have the demand for my “Fresh out of the Oven” muffins; you can smell the aroma for miles.
Once my son was born, shortly after I opened the restaurant, I would experiment with combinations that kids would like; applesauce, pumpkin, orange and honey. I have put together a recipe for a delicious after school or lunch box muffin I call “Glorious Morning.” The muffin got its name mostly because I created it early one morning (and I do mean early). The great thing about my recipe for these amazing muffins is that I am able to utilize all of the wonderful products from SHOP ‘n SAVE’s Wild Harvest free from and organic product line along with the Essential Everyday products to make a healthy snack that’s affordable and delicious.

Glorious Morning Muffins

- 1 1/2 cups Wild Harvest Organic All Purpose Flour
- 1/2 teaspoon Essential Everyday Baking Powder
- 1/4 teaspoon Essential Everyday Baking Soda
- 1 teaspoon Wild Harvest Organic Saigon Cinnamon
- 1/2 teaspoon Wild Harvest Organic Nutmeg
- Pinch salt
- 2 Wild Harvest Organic Grade A large Brown eggs
- 1 can 100% pure pumpkin puree
- 1 cup Wild Harvest Organic Applesauce
- 1/2 cup Wild Harvest Organic Honey
- 2 teaspoons Wild Harvest Organic Pure Vanilla Extract
- Zest of one orange
- 1/2 cup Wild Harvest Organic Walnut pieces
- 1/2 cup Wild Harvest Organic Seedless Raisins
Preheat oven 350 degrees. In a large bowl combine flour, baking powder, baking soda, cinnamon, nutmeg and salt. In separate large bowl mix together eggs, pumpkin, applesauce, honey and vanilla. Add flour mixture to wet ingredients, then stir in orange zest, walnuts and raisins. Portion mixture into 12 count muffin tin (lined with paper) bake for 20 minutes. Cool. Enjoy
