My kitchen at Caffe Barista is full of energy. We are always creating new and exciting recipes for our customers. With fall approaching, we begin preparing daily soups with fresh, natural ingredients. Over the past 20 years, we have fed millions of bowls of hearty delicious soup, but the stand out is my Stuffed Pepper Soup. Memories of my mother and grandmother making stuffed peppers when I was growing up and how I would smashed it all up is what inspired me to create a family tradition into a fantastic soup. Stuffed Pepper Soup

- 1 Cup Wild Harvest Multi Grain Blend Rice
- 1 lb. Wild Harvest 90% Lean Ground Beef
- 1 tablespoon Wild Harvest Organic Extra Virgin Olive Oil
- 1 green pepper, diced
- 1 yellow onion, diced
- 1 can Wild Harvest Organic Diced Tomatoes
- 1 can Essential Everyday Condensed Tomato Soup
- 1 cup water
- 1 tablespoon Wild Harvest Organic Black Pepper
- 1 tablespoon Essential Everyday Kosher Salt
In large stock pot, sauté chopped onions and peppers with olive oil until tender. In separate pan, brown ground beef over medium heat, drain and set aside. Add to the large stock pot the rice, cooked ground beef, tomatoes, soup, water, salt and pepper. Cook over low heat for 1 hour. Ladle into soup bowls and enjoy. Yields 10 to 12 servings.
