My school days, especially in elementary school, were filled with such fond memories of my teachers. I couldn’t wait for the first day of school to see what new teachers I would have that year. Some of my classmates would probably say that I was a “teacher’s pet,” and they would be absolutely right! I don’t remember bringing in an apple on the first day, but I was always eager to learn and enjoyed participating in class. As I grew older, into junior high and high school, I learned the art and science of baking. How I wish I could travel back in time to bring my teachers a slice of my delicious applesauce cake back then, because I’m sure I would have been an honor student!

For now, I’ll share this recipe with all of you so you can also enjoy making tasty “teacher’s pet” quality applesauce cake. Remember, I was a very good student and learned how to cook and bake, own and operate my very own restaurant and also teach and create blogs and recipes for utilizing SHOP ‘n SAVE’s Wild Harvest and Essential Everyday products. I know when I use free from and organic ingredients in my recipes they taste better and are good for me and my family, too! They’re also priced “Just Right.” Good thing I was paying attention in class!

Here is my wholesome, natural and delicious recipe for Applesauce Streusel Cake, all made with the ingredients found on the shelves and produce department at your local SHOP ‘n SAVE.

Applesauce Streusel Cake

Ingredients:
For Cake

  • 1 cup Wild Harvest Organic Pure Cane Sugar
  • 1/2 cup Wild Harvest Organic Light Brown Sugar
  • 3/4 cup Wild Harvest Organic Salted Butter
  • 1 cup Wild Harvest Organic Unsweetened Applesauce
  • 3 cups Wild Harvest All Purpose Flour
  • 3 teaspoons baking powder
  • 1 teaspoon salt
  • 1 teaspoon Wild Harvest Organic Ground Saigon Cinnamon
  • 1/2 teaspoon Wild Harvest Organic Nutmeg
  • 1 1/4 cups Wild Harvest Organic Whole Milk
  • 3 Essential Everyday Grade A Large Eggs
  • 1/2 cup Wild Harvest Organic Seedless Raisins
  • 1/2 cup walnuts
  • 1 teaspoon Wild Harvest Organic Chia Seeds
  • 1 teaspoon Wild Harvest Organic Flax Seeds
  • 3 cups sliced peeled Apples

For Streusel

  • 1/2 cup Wild Harvest Organic Salted Butter
  • 1/2 cup Wild Harvest Organic Light Brown Sugar
  • 3/4 cup Wild Harvest All-Purpose Flour
  • 1/2 teaspoon Wild Harvest Organic Ground Saigon Cinnamon

Directions:

For the streusel:

  1. In small bowl, mix together all streusel ingredients with a fork until crumbly, set aside.

For the cake:

  1. Preheat oven to 350 degrees.
  2. Cream butter with sugars. Add eggs, applesauce, milk and vanilla; beat well. Stir in flour, baking powder and spices. Add in nuts, raisins and seeds.
  3. Pour batter into greased and floured 9x13 pan. Layer with sliced apples then top with streusel. Bake 40 minutes. Serves 12-15.
