Cran-Apple Sweet Potato Packets

Yield: Makes 4 servings

Ingredients

1 sheet (18x24 inches) Reynolds Wrap Heavy Duty Aluminum Foil

4 med sweet potatoes, peeled and cut into 1/4-inch slices

2 Granny Smith or Golden Delicious apples, cored, thinly sliced into rings

1/2 cup dried cranberries or raisins

1/2 cup packed brown sugar

3 tablespoons margarine or butter, melted

1/2 teaspoon ground cinnamon

Directions:

Preheat oven to 450 F. or preheat grill to medium-high. Center sweet potatoes, apples and cranberries on sheet of Reynolds Wrap Heavy Duty Aluminum Foil. Sprinkle with brown sugar. Combine margarine and cinnamon; drizzle over brown sugar. Bring up sides of foil and double fold. Double fold ends to form one large foil packet, leaving room for heat circulation inside packet. Bake 25 to 30 minutes on cookie sheet in oven or grill 20 to 25 minutes, or until sweet potatoes are tender, in covered grill.
