4 cups fresh apple cider

1/3 cup packed light brown sugar

1 cinnamon stick

4 whole cloves

1 star anise

1/2 teaspoon peeled and sliced fresh ginger root

1 stalk lemon grass, sliced, or 1 sliced lemon

1/2 bay leaf

Directions:

In a medium saucepan, combine all the ingredients. Place over medium heat and stir until the sugar dissolves. Bring to a boil, reduce the heat and simmer, covered, for 10 minutes. Strain the mixture, discarding solids, and serve.
