Italian Bread Soup
Yield: 4-6 servings
Ingredients
| 1 | can | (1 lb. 12 oz.) whole tomatoes, undrained, cup up | |

|
|||
| 2 | cans | (14-1/2 oz. each) beef broth | |
|
|
|||
| 1 | pkg. | (1.5 oz.) spaghetti sauce spices and seasonings | |
|
|
|||
| 2 | cups | packaged cheese/garlic flavor croutons, lightly crushed | |
|
|
|||
| 1 | tablespoon | olive oil | |
|
|
|||
| 2 | teaspoons | chopped fresh sage or 3/4 tsp. dried sage | |
|
|
|||
| 1/4 | teaspoon | pepper | |
|
|
|||
| whole fresh sage leaves (garnish) | |||
|
|
|||
| additional croutons (garnish) | |||
|
|
|||
Directions:
In large saucepan, combine tomatoes, beef broth, spaghetti sauce spices and seasonings and croutons. Bring to a boil over medium-high heat; reduce heat to low and simmer, uncovered, 15 minutes, stirring frequently.
Add remaining ingredients and simmer 5 minutes longer.
