Cornmeal Muffins

Ingredients

1 1/2 cups all purpose flour

1/2 cup yellow cornmeal

1/4 cup soy flour

1/4 cup granulated sugar

1 tablespoon baking powder

1/4 teaspoon salt

1 cup soy milk

2 eggs, beaten

1/4 cup vegetable oil

Directions:

Preheat oven to 400 degrees F

Spray muffins pans with nonstick cooking spray (12 count).

In a large bowl, mix together flour, cornmeal, soy flour, sugar, baking powder and salt.

Combine soy milk, eggs and oil; add to dry ingredients and stir just until moistened. Fill muffin cups evenly with batter.

Bake for 20 minutes. Cool on wire rack.
