Asparagus With Herb Dressing

Yield: 6 servings

Ingredients

1-1/2 cups mayonnaise

2/3 cup heavy cream

1/2 cup green onion, chopped

1/2 cup fresh parsley, minced

2 tablespoons chives, minced

2 tablespoons lemon juice

2 lbs. fresh asparagus spears, trimmed

Add To

Directions:

In a blender, combine mayonnaise, heavy cream, onion, parsley, chives and juice. Cover and process until smooth. Cover and
refrigerate at least 1 hour.

In a skillet, cook asparagus in small amount of water for 3-5 minutes or until crisp tender; drain well. Spoon dressing over asparagus; serve at once.
