Linguine with Shrimp and Asparagus

Ingredients

12 ounces Essential Everyday Linguine

2 tablespoons Essential Everyday Extra Virgin Olive Oil

1 tablespoon minced garlic

1 pound uncooked shrimp, peeled and deveined

1/2 pound fresh asparagus, trimmed, cut into thirds

1 teaspoon Essential Everyday Salt

1/4 teaspoon ground white pepper

1 cup Essential Everyday Half and Half

1 medium tomato, diced

2 tablespoons chopped fresh basil leaves

1/2 cup Essential Everyday Fancy Shredded Italian Style Parmesan Cheese

Directions:

Prepare pasta according to package directions; drain.

Meanwhile, in large skillet, heat olive oil over medium-high heat. Add garlic, shrimp, asparagus, salt and white pepper. Saute until shrimp is opaque and asparagus is tender (about 5 minutes).

Stir in half and half; bring to a boil. Reduce heat; simmer 4 minutes.

Stir in tomatoes, basil and pasta; toss to coat pasta.

Transfer to a serving platter and sprinkle with Parmesan cheese. Garnish with basil sprigs, if desired.
