Grilled Ribeye with Garlic Citrus Chimichurri

Add a little zest to tonight's dinner with a citrusy sauce.

Yield: 4 servings

Preparation Time: 20 min; Cook Time: 10-15 min

Ingredients

4 Star Ranch Angus® prime rib steaks, 8 oz each

4 teaspoons olive oil, divided

2 teaspoons kosher salt

2 teaspoons freshly ground beef black pepper

Garlic Citrus Chimichurri:

1/3 cup cilantro leaves

1/4 cup fresh Italian parsley leaves

1/4 piece jalapeno, seeded

1 tablespoon minced garlic

2 teaspoons fresh oregano leaves

5 tablespoons olive oil

1 teaspoon lemon juice

1 teaspoon lime juice

1 teaspoon orange zest

1/4 teaspoon salt

1/4 teaspoon freshly ground black pepper

Directions:

Preheat grill on high. Rub each steak with 1 teaspoon olive oil; sprinkle with salt and pepper.

Garlic Citrus Chimichurri:
In a food processor bowl, pulse cilantro, parsley, jalapeno, garlic, oregano, olive oil, lemon juice, lime juice, orange zest, salt and pepper until combined.

GRILLING TIP TIP:
Prepare grill (charcoal or gas) according to manufacturer's directions for medium heat. To check temperature on a charcoal grill, cautiously hold the palm of your hand above the coals at cooking height. Count the number of seconds you can hold your hand in that position before the heat forces you to pull it away, approximately 4 seconds for medium heat.
