Black Bean and Corn Guacamole

Yield: Makes 3 1/2 cups

Ingredients

2 ripe avocados pitted, peeled and diced

1 can (15 ounce) Essential Everyday Black Beans, rinsed and drained

1 can (10 ounce) Essential Everyday Diced Tomatoes with Green Chiles, Lime Juice and Cilantro, drained

1 cup Essential Everyday Frozen Super Sweet Corn, thawed and drained

1 tablespoon fresh squeezed lime juice

1/2 teaspoon minced garlic

Add To

Directions:

In large mixing bowl, combine all ingredients; salt and pepper to taste.

Mash to desired consistency.

Serve immediately or refrigerate, covered with plastic wrap directly in contact with guacamole, up to 1 hour ahead.
