Asparagus With Herb Dressing
Yield: 6 servings
Ingredients
| 1-1/2 | cups | mayonnaise | |

| 2/3 | cup | heavy cream | |
|
|
|||
| 1/2 | cup | green onion, chopped | |
|
|
|||
| 1/2 | cup | fresh parsley, minced | |
|
|
|||
| 2 | tablespoons | chives, minced | |
|
|
|||
| 2 | tablespoons | lemon juice | |
|
|
|||
| 2 | lbs. | fresh asparagus spears, trimmed | |
|
|
|||
Directions:
In a blender, combine mayonnaise, heavy cream, onion, parsley, chives and juice. Cover and process until smooth. Cover and
refrigerate at least 1 hour.
In a skillet, cook asparagus in small amount of water for 3-5 minutes or until crisp tender; drain well. Spoon dressing over asparagus; serve at once.
