2 | slices | fresh gingerroot, about 1/4 inch thick | |

1/2 | cup | carrots, chopped | |

|||
1-1/2 | cups | instant rice, uncooked | |
|
|||
1 | cup | snow peas, fresh or frozen | |
|
|||
1/4 | cup | green onions, chopped | |
|
Rinse chicken with cold water and pat dry with paper towels. Cut into 1 inch pieces. Heat broth and gingerroot in a large saucepan; add chicken. Simmer 5 minutes. Add carrots; simmer 5 minutes or until chicken is thoroughly cooked.
Stir in rice and pea pods. Remove from heat; cover. Let stand for 5 minutes. Remove gingerroot. Sprinkle with green onions.
