Preheat oven to 400 degrees F.
Place herbs in a zip-lock bag and shake to blend. Place roast in bag and shake to coat.
Remove meat from plastic bag and place in baking dish. Cook for 45 minutes at 400 degrees F.
Turn oven down to 275 degrees F. and cook for an additional 30 to 45 minutes.
Serve with bearnaise sauce.
Meat thermometer should read:
120 - 125 F. for rare
130 - 135 F. for medium rare
140 - 145 F. for medium
150 - 155 F. for medium well
160 F. and above for well
