Fresh Peach and Mint Cottage Cheese Salad
Yield: 2 servings
Ingredients
| 1 | cup | cottage cheese | |

|||
| 1/8 | cup | chopped fresh mint leaves | |
|
|
|||
| 12 | slices | cucumber, thinly sliced | |
|
|
|||
| 1 | large or 2 small thinly sliced fresh peaches | ||
|
|
|||
| Garnish with mint leaves | |||
|
|
|||
| 1 | bag | crunchy pita chips | |
|
|
|||
Directions:
Add chopped mint to cottage cheese and stir to blend.
Arrange cucumber slices and peaches on two salad plates and top with 1/2 cup cottage cheese.
Garnish with fresh mint leaves and serve with crunchy pita chips.
