Herb Roasted Potatoes
Yield: 4 servings

Ingredients
| 1/3 | cup | Dijon mustard | |

|||
| 2 | tablespoons | olive oil | |
|
|
|||
| 1 | clove | garlic, finely chopped | |
|
|
|||
| 1/2 | teaspoon | dried Italian seasoning | |
|
|
|||
| 6 | medium red skinned potatoes, scrubbed and cut into wedges (about 2 pounds) | ||

Directions:
Preheat oven to 425f
Mix mustard, olive oil, garlic and Italian seasoning in a gallon size, food safe, sealable plastic bag.
Add potato wedges, seal bag and toss until potatoes are covered with the mustard mixture.
Spread potatoes in a single layer on a large baking pan. Roast for 35 minutes or until potatoes are fork tender.
