Grilled Veggie Sandwich

Ingredients
| 1 | sandwich bun, split | ||

| 1/4 | cup | salad greens | |
|
|
|||
| 2 | slices | eggplant, grilled | |
|
|
|||
| 2 | slices | provolone cheese | |
|
|
|||
| Salt to taste | |||
|
|
|||
| Pepper to taste | |||
|
|
|||
| Mayonnaise | |||
|
|
|||
Directions:
On bottom half of bun, layer greens, eggplant and cheese; sprinkle with salt and pepper. Spread mayonnaise on top half of bun; top sandwich with bun.
