Red Lentils
Yield: 3 cups
Ingredients
| 1/2 | lb. | red lentils (Egyptian) | |

| 2 | cups | water | |
|
|
|||
| 1/2 | cup | low-sodium chicken broth | |
|
|
|||
| 1/4 | teaspoon | salt | |
|
|
|||
Directions:
Rinse and drain lentils. In a 2-quart saucepan, bring the water, the chicken broth, and salt just to boiling; stir in lentils. Simmer lentils, covered, in the salt water mixture for 30 minutes or until soft. Drain any excess liquid.
