Pork Salad Croissant
Yield: 4 servings
Ingredients
| 2 | cups | cooked pork tenderloin, diced | |

| 1 | medium tart apple, diced | ||

|
|||
| 1/2 | cup | seedless red grapes, halved | |
|
|
|||
| 1/2 | cup | mayonnaise | |
|
|
|||
| 2 | tablespoons | walnuts, chopped | |
|
|
|||
| 2 | tablespoons | chutney | |
|
|
|||
| 1/2 | teaspoon | salt | |
|
|
|||
| 1/4 | teaspoon | ground ginger | |
|
|
|||
| lettuce leaves | |||
|
|
|||
| 4 | croissants, split | ||
|
|
|||
Directions:
In a bowl, combine pork, apple, grapes, mayonnaise, walnuts, chutney, salt and ginger; mix well. Serve on lettuce lined croissants.
