Cauliflower And Spinach Salad
Yield: 8 servings
Ingredients
| 2 | cups | cauliflower florets | |
|

|||
| 1 | can | (11 ounce) Mandarin oranges, drained | |
|
|
|||
| 1/4 | cup | green pepper, chopped | |
|
|
|||
| 2 | large radishes, sliced | ||
|
|
|||
| 4 | cups | fresh torn spinach | |
|
|
|||
| 1 | can | (5 ounce) evaporated milk | |
|
|
|||
| 1/3 | cup | orange juice concentrate | |
|
|
|||
Directions:
In a large bowl, combine cauliflower, oranges, green pepper, radishes and spinach. Pour milk in a small bowl; gradually whisk in orange juice concentrate. Drizzle over salad and toss to coat. Refrigerate leftovers.
