Chocolate Dipped Ice Cream Sandwiches

Ingredients

1 cup softened vanilla ice cream

8 Essential Everyday Chewy Chocolate Chip Cookies

1 cup Essential Everyday Semi-sweet Chocolate Chips

Directions:

Place one scoop of ice cream on the bottom side of one cookie. Top with a second cookie, bottom side down. Gently press together. Repeat with remaining cookies.

Place on a baking sheet and put in freezer. Freeze until ice cream is firm.

Meanwhile, place chocolate chips in a small microwaveable bowl. Microwave (HIGH) 1 minute; stir. Continue microwaving in 30 second intervals, stirring between each one, until melted and smooth.

Remove sandwiches from freezer. Dip sandwich halfway into melted chocolate. Gently pull out of chocolate and allow excess chocolate to drip off. Place sandwiches on a cooling rack to allow chocolate to set. Place back on baking sheet and freeze solid. Serve or place in pint size recloseable food storage bags for later use.
