Warm Caribbean Salsa

Ingredients

Olive oil cooking spray

1-2 teaspoons Jamaican Jerk Seasoning

1 small red onion, about 1/2 cup, diced

2 tablespoons orange juice

1 cup papaya, peeled, seeded and diced

1 medium tomato, about 1 cup, seeded and diced

1-2 tablespoons minced fresh cilantro

Directions:

Coat a skillet lightly with cooking spray and place over medium heat. Add jerk seasoning, onion and orange juice. Stir and cook until onion is tender, 3-4 minutes. Remove from heat.

Add papaya and tomato. Sprinkle with cilantro, then stir gently to mix.

Serve over baked fish, chicken or pork.
